The Nest Hello is different from other video doorbells because it comes with a chime connector in the box that must be installed on your indoor chime. It's sort of an adapter-like device (with a resistor inside, most likely) that gets installed between your doorbell wiring and the chime itself.

My theory is that the Nest doorbell is leaking current even when not active, and this is enough to trigger the chime. But as soon as the chime triggers, it pulls more current, dropping the voltage to the point where it switches off. Thus, it plays a fraction of a second of its tune, which makes a click.
